One of our most popular dishes at the restaurant. Use choice mushrooms, fresh rapini, a good local white wine and, of course, butter.

For Mushrooms
- 2 Tbsp Butter
- 1 Tbsp Garlic
- 2 Tbsp White Wine (unoaked Ontario chardonnay is our favourite)
- 4 Tbsp Water
- 1/4 tsp Salt
- 1/4 tsp Pepper
- Two small handfuls of Oyster and King mushrooms.
For Rapini
- 1Tbsp Vegetable oil
- 1Tbsp Garlic
- 1/4 tsp Salt
- 1/4 tsp Pepper
- One bunch of Rapini.
Instructions
- Over a high heat, melt the butter in a medium-sized frying pan.
- Add garlic and water. Let simmer for 30 seconds.
- Add mushrooms. Add wine and saute till fragrant.
- Blanch the rapini in boiling water for 15 seconds.
- In another hot frying pan, warm the oil, add garlic, salt and pepper.
- Add rapini to the oil and garlic. Saute until the garlic is cooked.
Notes
- Place the rapini on a serving plate and pour the mushrooms over top.
- Serve hot with crusty bread and a wedge of lemon.
