FEATURE RECIPE #2: RAPINI & MUSHROOMS

Rapini & Mushrooms
Serves 4
One of our most popular dishes at the restaurant. Use choice mushrooms, fresh rapini, a good local white wine and, of course, butter.

For Mushrooms
  1. 2 Tbsp Butter
  2. 1 Tbsp Garlic
  3. 2 Tbsp White Wine (unoaked Ontario chardonnay is our favourite)
  4. 4 Tbsp Water
  5. 1/4 tsp Salt
  6. 1/4 tsp Pepper
  7. Two small handfuls of Oyster and King mushrooms.
For Rapini
  1. 1Tbsp Vegetable oil
  2. 1Tbsp Garlic
  3. 1/4 tsp Salt
  4. 1/4 tsp Pepper
  5. One bunch of Rapini.
Instructions
  1. Over a high heat, melt the butter in a medium-sized frying pan.
  2. Add garlic and water. Let simmer for 30 seconds.
  3. Add mushrooms. Add wine and saute till fragrant.
  4. Blanch the rapini in boiling water for 15 seconds.
  5. In another hot frying pan, warm the oil, add garlic, salt and pepper.
  6. Add rapini to the oil and garlic. Saute until the garlic is cooked.
Notes
  1. Place the rapini on a serving plate and pour the mushrooms over top.
  2. Serve hot with crusty bread and a wedge of lemon.
