Strawberry Rhubarb Frozen Yogurt Popsicle

By far our most popular dessert of Summer 2014. Originally created for the kids, who generally don't like eating rhubarb- too sour. But soon their parents, after a small "taste", slowly took over eating the whole thing. "Can we order another one for the kids, please." Poor kids. Here is the recipe we use that the whole family can enjoy, with a simple technique to take the sour squint out of the rhubarb.

Ingredients
- 50 grams fresh strawberries
- 25 grams rhubarb
- 40 grams sugar
- 150 grams plain yogurt
- 1 lemon wedge
Instructions
- 1. Dice strawberries and place into bowl
- 2. Chop rhubarb and toss with 1 tablespoon of sugar in a pot
- 3. Place pot of rhubarb over medium heat 10 minutes until rhubarb becomes tender. Let it cool at room temperature
- 4. Mix well the rhubarb in a bowl with strawberries, yogurt and sugar
- 5. Pour into plastic popsicle mould and place in freezer
- 6. Serve after freezing for two hours
Notes
- If serving in a bowl after removing it from the mould, like we do, add a few fresh berries for presentation
